Coconut Chicken Curry This coconut chicken curry is packed with delicious flavors and an easy one pot meal. This curry can be made in 30 minutes or less making it the perfect weeknight dinner! SOUTHWEST CHICKEN SKILLET If you're looking for a quick and easy dinner, this Southwest Chicken Skillet is it! Precooked chicken makes this dinner possible in about 30 minutes. INGREDIENTS 1 cup uncooked long grain white rice 1 cup salsa ($0.65) 1.5-2 cups precooked shredded chicken 15 oz. can black beans  1 Tbsp chili powder 1 3/4 cups chicken broth 1 cup shredded cheese  2-3 green onions, sliced INSTRUCTIONS In a large skillet, combine the rice, salsa, chicken, black beans (drained), chili powder, and chicken broth.
